CENCOIC - Central Cooperativa Indígena del Cauca (Coffee)

Nasa indigenous peoples promote community work, social and cultural development, from their world view. This collective work, by 2930 families from 19 indigenous reservations in the department of Cauca, results in this special and organic coffee, grown in each of the peasant reserves.

  • Cup profile: Pleasant fragrance of chocolate, caramel, red fruits, aromatic. Honey, panela (sugarcane), sweet, floral aroma. Flavor with juicy, silky, round body. Clean, consistent cup. Medium-high sweetness, medium acidity, yellow fruits, citrus notes, aromatic and delicate spices.

  • Production unit area: 0,92 hectares

  • Harvest: Manual, red coffee cherries.

  • Processing method: Traditionally and individually washed and pulped, with calibrated machines.

  • Drying: Parabolic dryers, between 10 to 15 days.
